Grandma Van’s Pea Soup

Great-grandma Vandermolen passed down this classic dutch pea soup recipe to my grandmother, who then passed it down to my mother. I can not honestly say I’m the biggest fan of pea soup – but I happily illustrated it for my family. For all you who like green mushy soup, do enjoy!

  • 1 medium potato
  • 1 small onion
  • 1 lb. smoked, roasted sausage
  • water (to cover)

Slice sausage and par-boil in sauce pan to remove fat. Rinse and drain sausage then add to soup. Stir on occasion. Soup should be finished after 3-4 hours.
