Nikki’s Famous Manicotti

  • 1 (8 oz.) package manicotti noodles
  • 2 eggs
  • 1 (15 oz.) ricotta cheese
  • 4 c. shredded mozzarella cheese (divided)
  • 1 c. grated parmesan cheese (divided)
  • 1 Tbs. fresh parsley
  • 1 (24 oz.) jar spaghetti sauce

Preheat oven to 350º. Cook manicotti noodles according to package. Rinse with cold water and set aside. Beat eggs in large bowl, mix in ricotta, 3 c. mozzarella, 3/4 c. parmesan and parsley. Fill shells with mixture. Grease baking dish and add light layer of spaghetti sauce to the bottom. Arrange the shells in the baking dish and top with remaining sauce and cheeses. Cover with foil and bake at 350º for 45 minutes.
