Nana’s Pancakes

Those ready-made mixes are handy but none can compare to these fluffy, buttery rich pancakes made from scratch. You already have all these ingredients in the kitchen – why not break out those measuring cups and treat yourself to some real pancakes!
Nana’s Pancakes
- 1 c. flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 tsp sugar
- 1 egg
- 1 c. milk
- 2 tbs. oil
Mix dry ingredients in a large bowl. Separately, beat egg and milk then stir in oil. Add wet ingredients to large bowl and beat until smooth. Heat a greased pan over medium heat. Pour batter by the 1/4 cup into evenly spaced circles in the pan. Flip pancakes once bubbles form and cook until both sides are golden brown.
Yield: 2-3 servings (double recipe for 4 people)
