Gluten-Free Rice-Flour Pancakes

These light and fluffy gluten-free pancakes don’t taste gluten free at all. I find these even easier than regular pancakes to whip up and love the light and healthy taste they have. For best results, use the finest-milled rice flour possible. I love to mix it up and used fruit-in-the-bottom yogurt for flavored pancakes.


Gluten-Free Rice-Flour Pancakes

  • 1 c. rice flour
  • 1 tsp. baking soda
  • 2 eggs
  • 1 c. yogurt

Combine dry ingredients then mix in wet. Whisk until batter is fluffy. Pour into greased, non-stick skillet on medium heat. Flip as soon as bubbles appear. Remove once both sides are golden brown
