Chicken Goulash Recipe
This chicken goulash recipe is from my mom. It was a staple “quick and easy” dinner recipe at our house growing up. It never fails to please and is a snap to throw together. Nothing like simple comfort food for a good weeknight meal!
Chicken Goulash with lots of Basil
- 2 lb. chicken breast
- 1-2 tbs. oil
- 1 can (28 oz) crushed or diced tomatoes
- 1/3 c. basil
- 1 tsp. sugar
- salt and pepper to taste
- parmesan cheese
Prepare your choice of pasta as directed.
Cook meat in deep skillet with oil, breaking it apart into bite-sized pieces as it cooks. Once chicken is cooked through, add diced tomatoes, basil, sugar, salt and pepper to skillet. Let simmer for 7-10 minutes. Once pasta is tender, drain and add to skillet. Serve topped with parmesan cheese.
