Corn Chowder

A family favorite, this hearty chowder is easy to throw together and as rich and creamy as can be. It’s a staple at any winter family gathering, especially Christmas Eve! Using bacon grease instead of oil really gives this chowder it’s cut-above-the-rest flavor, so don’t try to use a substitute. If I don’t have any bacon grease on-hand, I’ll cook up some bacon (any excuse right?!), break up the (uneaten) pieces and throw them in the chowder as well!

Corn Chowder

  • 3 onions, copped
  • 2 tbs. bacon fat
  • lots of potatoes (5-7)
  • 1 can (14 oz.) sweet corn
  • 2 cans (14 oz.) creamed corn
  • 1 can (10 oz.) evaporated milk (or 3 tbs. cream)
  • salt & pepper
  • basil or parsley flakes

Fry onions in bacon fat, boil potatoes in enough water to cover. Add onions, corn and evaporated milk to potatoes. Season to taste with salt & pepper and basil or parsley.
